Located at the top floor of Cabins by Eco Hotel across the Ayala Mall Serin in Aguinaldo Highway, Tagaytay, is a quaint Mexican restaurant and bar overlooking the scenic Taal Volcano.
The word Chinampa means a Mexican artificial meadow or garden reclaimed from a lake or pond by piling soil dredged from the bottom onto a mat of twigs and planting thereon. At Eco Hotels, we value our guests’ health, the environment and it is a thrust to make our employees’ socially responsible for others, one’s whole being and the surroundings. That is why only the freshest garden greens from our vertical gardens are picked for healthy salads bowls, smoothies and Mexican specialties as well as for other Keto, gluten-free, casein-free and vegetarian dishes. We also serve organic meats, poultry and the freshest seafood catch our purveyors supply to us.
We take time and outmost care in preparing for the special diet menu. The gluten-free and vegetarian dishes are prepared on a separate area to ensure that there is no cross contamination of allergens and a separate set of materials and tools are used to prepare and cook these foods.
As much as possible, we use local, home-grown ingredients and support our local farmers or buy from trusted suppliers who use pesticide-free chemicals on the produce.
Chinampa Taqueria’s specialties include the breakfast favorite Huevos Ranchero – a complete meal of beef carne guisado stewed and slow cooked with savory Mexican spices, served with corn tortilla, black beans, fried eggs, Pico de Gallo and Mexican rice; Nacho Grande in meat or cheese, good for sharing; and soft tacos with our home made regular, corn or whole wheat tortillas. Chinampa also serves regular Filipino favorite breakfast meals such as Tapang Taal, Boneless Bangus, Fried Danggit, Longganisa and corned beef served with garlic rice and your choice of eggs, served with Barako coffee or hot Alfonso tablea , too.
During happy hours, come up to the roof deck at Chinampa and enjoy the array of cocktail drinks, local and imported wines and beers.
